  • 4 lobster tails (68 ounces each)
  • 1/2 cup unsalted butter
  • 4 cloves garlic (minced)
  • 2 tablespoons fresh parsley (chopped)
  • 1 tablespoon lemon juice
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Preheat your grill to medium-high heat (350°F to 400°F).
  2. Using kitchen scissors, cut down the center of each lobster tail’s top shell without cutting through the tail. Gently pull apart the shell.
  3. In a bowl, melt the butter and mix in minced garlic, parsley, lemon juice, paprika, salt, and pepper.
  4. Brush the exposed lobster meat with part of the garlic butter mixture and reserve some for basting.
  5. Grill lobster tails shell side down for about 5 minutes until they turn opaque.
  6. Flip and baste with remaining garlic butter; grill for another 5 minutes until fully cooked.
  7. Let rest for a couple of minutes before serving.
