  • 6 chicken thighs (boneless, skin on or off)
  • 3 peaches (cored, quartered)
  • 1 peach (skin off, cored, diced)
  • 1 tsp sugar
  • 1/2 cup barbecue sauce
  • 1/2 cup apple juice mixed with 1 tbsp vinegar
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp chili powder
  • 1/4 tsp cayenne pepper (optional)
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. In a bowl, mix together onion powder, garlic powder, paprika, chili powder, cayenne pepper (if using), salt, and black pepper. Rub this spice blend generously over the chicken thighs.
  2. In a saucepan over medium heat, combine the diced peach and sugar. Cook until bubbling and then reduce to simmer for about five minutes.
  3. Add the barbecue sauce and the apple juice-vinegar mixture to the saucepan. Stir well and simmer until thickened.
  4. Preheat your grill to medium-high heat and cook the seasoned chicken thighs for about 3-5 minutes per side until they reach an internal temperature of 165°F.
  5. Brush the peach BBQ sauce over the chicken during the last few minutes of grilling for an extra glaze.
  6. Grill quartered peaches alongside the chicken for 1-2 minutes per side until caramelized.
