  • 34 medium potatoes
  • 1 large carrot
  • 1 small onion
  • 10 sorrel leaves or chopped spinach + lemon juice
  • 2 tablespoons chopped fresh dill
  • 4 cups filtered water
  • 2 teaspoons vegetable bouillon base
  • 1 tablespoon ghee butter or olive oil
  • 2 bay leaves
  • 1 tablespoon sour cream (for serving)
  • 1/2 hard boiled egg (for serving)
  • 1/4 teaspoon black pepper (for serving)

Instructions

  1. Cube the potatoes and carrots, dice the onion, and chop the sorrel (or spinach) and dill.
  2. In a large pot, heat ghee butter over medium heat. Sauté the onions until translucent, then add carrots and cook for another 3 minutes.
  3. Pour in filtered water, add cubed potatoes and bay leaves, then stir in vegetable bouillon. Bring to a boil, cover, and simmer for 20 minutes until vegetables are tender.
  4. Stir in chopped sorrel (or spinach) and dill; let sit covered for 10 minutes before serving.
  5. Ladle into bowls and garnish with sour cream and boiled egg if desired.
