  • 12 oz pasta (penne, fusilli, or your choice)
  • 2 tbsp extra virgin olive oil
  • 2 cloves garlic (minced)
  • ½ small red onion (finely chopped)
  • 1 ½ cups cherry tomatoes (halved)
  • ½ cup Kalamata olives (sliced)
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 1 tsp dried oregano
  • ½ tsp dried basil
  • ¼ tsp salt
  • ¼ tsp black pepper
  • ½ cup feta cheese (crumbled)
  • Fresh basil (for garnish, optional)

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and reserve some pasta water.
  2. In a large pan over medium heat, warm the olive oil and sauté garlic and red onion until fragrant.
  3. Add cherry tomatoes and Kalamata olives; cook for about 3-4 minutes until softened.
  4. Stir in lemon juice, lemon zest, oregano, basil, salt, and pepper.
  5. Combine the cooked pasta with the vegetable mixture, adding reserved pasta water as needed to create a light sauce.
  6. Sprinkle crumbled feta on top and gently mix until warmed through.
  7. Serve warm with fresh basil if desired.
