  • 1 medium yellow or orange bell pepper (de-seeded & chopped)
  • 1 medium green bell pepper (de-seeded & chopped)
  • 1 ½ cups English cucumber (sliced into quarter-moons)
  • ½ cup kalamata olives (no pits & sliced)
  • 4 oz feta cheese (or dairy-free alternative)

Instructions

  1. Cook the chickpea pasta in boiling salted water until al dente. Drain and cool under cold water.
  2. In a separate bowl, whisk together olive oil, lemon juice, apple cider vinegar, dijon mustard, minced garlic, oregano, salt, and black pepper.
