  • ¼ cup powdered sugar
  • ¼ tsp salt
  • ½ cup butter (room temperature)
  • 1 ½ cups granulated sugar
  • ¼ cup all-purpose flour (for filling)
  • 4 large eggs
  • 1 Tablespoon grapefruit zest
  • 1 cup grapefruit juice

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. For the crust: Combine flour, powdered sugar, salt, and butter in a food processor until crumbly. Press into the bottom of a baking dish and bake for 18-20 minutes until golden.
  3. For the filling: Whisk together granulated sugar and flour. Add eggs one at a time, whisking well after each addition. Mix in grapefruit zest and juice.
  4. Pour the filling over the hot crust and bake for an additional 20 minutes.
  5. Allow to cool completely before refrigerating for at least one hour before slicing.
