  • 1 butternut squash, peeled, seeded, and cubed

  • 1 tsp fresh ginger, grated
  • 3–4 cups vegetable broth
  • Black pepper to taste

Instructions

  1. In a large pot over medium heat, sauté the onions in olive oil with sea salt and black pepper for 5–8 minutes until soft.
  2. Add the cubed butternut squash and cook for another 8–10 minutes until lightly golden.
  3. Stir in the garlic, sage, rosemary, and ginger, cooking until fragrant (30–60 seconds).
  4. Pour in 3 cups of vegetable broth and bring to a boil. Reduce the heat and simmer covered for 25 minutes.
  5. Blend the soup until smooth, adding more broth if needed for desired consistency.
  6. Adjust seasoning if necessary before serving hot with parsley garnish and toasted pepitas.
