  • Salt & black pepper, to taste
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 1 tbsp all-purpose flour
  • 2 cups milk (whole or 2%)
  • 1 cup beef broth
  • 2 cups shredded sharp cheddar cheese
  • 1 package (20 oz) cheese tortellini
  • ½ cup shredded mozzarella (for topping)
  • 2 tbsp chopped parsley (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Season sirloin steak with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Sear the steak until browned and cooked through, then set aside.
  3. In the same skillet, melt butter and sauté garlic until fragrant. Sprinkle in flour to create a roux; stir for one minute.
  4. Gradually whisk in milk and beef broth until smooth. Stir in cheddar cheese until melted and creamy.
  5. Cook tortellini according to package directions; drain lightly and toss with olive oil.
  6. Combine tortellini, seared steak, and cheese sauce in a greased baking dish. Top with shredded mozzarella.
  7. Bake uncovered for 20-25 minutes until bubbly and golden brown.
  8. Let cool slightly before serving; garnish with parsley.
