  • ½ onion, diced
  • 2 garlic cloves, minced
  • 2 pounds ground beef (or ground turkey/lamb)
  • 4 celery stalks, diced
  • 2 carrots, diced
  • 4 tablespoons tomato paste
  • 1½ cups beef broth
  • 1 teaspoon salt
  • 2 teaspoons pepper
  • 4 large sweet potatoes or Yukon Gold potatoes, peeled and cut
  • ¼ cup dairy-free milk (like almond milk)
  • 2 tablespoons dairy-free butter

Instructions

  1. Preheat your oven to 350°F.
  2. Boil sweet potatoes in a large pot until tender (10–15 minutes). Drain and set aside.
  3. In a deep skillet over medium-high heat, add olive oil and sauté onions for about five minutes until translucent. Add garlic and cook until fragrant.
  4. Brown ground beef or turkey in the skillet for about seven minutes. Drain excess fat.
  5. Stir in celery, carrots, tomato paste, beef broth, salt, pepper, rosemary, and thyme; simmer for about 10 minutes until vegetables soften.
  6. Mash boiled sweet potatoes with dairy-free milk and butter until smooth; mix in beaten egg.
  7. Transfer meat mixture to a baking dish; spread mashed potatoes on top evenly.
  8. Bake uncovered for about 20 minutes or until hot and bubbly.
