  • 2 large eggs
  • 1/4 cup melted butter (or coconut oil)
  • 2 tsp pure vanilla extract
  • 1 2/3 cups gluten-free all-purpose flour
  • 1/2 cup coconut sugar
  • 1 tsp baking soda
  • 1/2 tsp sea salt
  • Optional: 2 tsp ground cinnamon, 2/3 cup chocolate chips or nuts

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9” x 5” loaf pan by lining it with parchment paper.
  2. In a mixing bowl, mash the ripe bananas until smooth.
  3. Whisk in eggs, melted butter, and vanilla extract until well combined.
  4. In another bowl, sift together gluten-free flour, coconut sugar, baking soda, sea salt, and cinnamon if using.
  5. Gently fold dry ingredients into the wet mixture until just combined; avoid overmixing. If desired, fold in chocolate chips or nuts.
  6. Pour batter into the prepared loaf pan and smooth the top.
  7. Bake for 50-60 minutes or until golden brown and a toothpick inserted comes out clean.
  8. Allow to cool in the pan for about 30 minutes before transferring to a wire rack.
