  • ¾ cup granulated sugar
  • 2 tablespoons lemon zest
  • 1 large egg
  • 1 ½ cups powdered sugar
  • 2 to 4 tablespoons fresh lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, cream the butter and granulated sugar until light and fluffy. Add lemon zest and egg; mix well.
  4. Gradually add dry ingredients to wet ingredients until combined.
  5. Use a medium scoop to drop dough onto prepared sheets, spacing them about 2 inches apart.
  6. Gently flatten each ball to about ⅓ inch thick.
  7. Bake for 12-14 minutes until edges are lightly golden but centers remain soft.
  8. Cool on the baking sheet for 5 minutes before transferring to cooling racks.
  9. For the glaze, mix powdered sugar with lemon juice until smooth; drizzle over cooled cookies.
