  • 3/4 cup brown sugar
  • 1/4 cup white granulated sugar
  • 1 large egg (room temperature)
  • 2 tsp vanilla extract
  • 1/4 cup molasses
  • White granulated sugar (for rolling)
  • 1 1/2 cup powdered sugar (sifted)
  • 1/4 tsp ground cinnamon
  • 2 tbsp espresso or strong coffee (adjust as needed)

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking soda, salt, ginger, cinnamon, clove, and espresso powder.
  3. In another bowl, cream softened butter with brown and granulated sugars until light and fluffy.
  4. Beat in the egg, vanilla extract, and molasses until fully combined.
  5. Gradually mix in the dry ingredients until just combined; avoid overmixing.
  6. Scoop dough balls and roll in granulated sugar before placing on prepared baking sheets.
  7. Bake for about 13 minutes until edges are set but centers remain soft. Allow cooling on sheets for a few minutes before transferring to wire racks.
  8. Prepare glaze by mixing sifted powdered sugar with cinnamon and espresso or coffee. Drizzle over cooled cookies.
