  • 1 cup brown sugar
  • 1 large egg

  • 1/3 cup molasses
  • 1/3 cup white sugar
  • 1/2 cup unsalted butter (softened)
  • 3/4 cup vegan marshmallows cream
  • 1/4 teaspoon salt
  • 11 1/2 cup powdered sugar
  • 1 tablespoon milk or cream

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, whisk together flour, ginger, baking soda, salt, cinnamon, nutmeg, and cloves.
  2. In another bowl, cream together the butter and brown sugar until light and fluffy. Beat in the egg and vanilla extract.
  3. Gradually mix dry ingredients into the wet mixture along with molasses until combined.
  4. Scoop tablespoon-sized amounts onto lined baking sheets, flatten slightly, and bake for about 10 minutes until set but still soft.
  5. Allow cookies to cool completely on wire racks.
  6. For frosting: beat together softened butter and vegan marshmallows cream until fluffy; gradually add powdered sugar to desired consistency.
