  • 500 grams diced chicken breast
  • 1 medium onion, diced
  • 2 carrots, julienned
  • 2 cups finely chopped cabbage (or 1 cup cabbage and 1 cup bell pepper)
  • 3 garlic cloves, minced
  • 3 large eggs
  • 3 tablespoons soy sauce (ensure halal-friendly)
  • 1 tablespoon rice vinegar
  • 1 teaspoon fresh ginger, grated
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • Optional: Fresh cilantro or green onions for garnish

Instructions

  1. Heat the oil in a large frying pan over medium heat.
  2. Sauté the diced chicken for about 5–7 minutes until cooked through and slightly browned; season with salt and pepper.
  3. Remove chicken from the pan; set aside.
  4. In the same pan, add onion, carrots, and cabbage (and bell pepper if using). Cook for about 5 minutes until softened.
  5. Stir in garlic and ginger; sauté for another minute until fragrant.
  6. Whisk eggs in a bowl; push veggies aside in the pan and scramble the eggs until fully cooked.
  7. Return chicken to the pan; mix everything together well.
  8. Drizzle with soy sauce and rice vinegar; stir until coated.
  9. Finish with sesame oil and adjust seasoning as desired.
  10. Serve hot, garnished with cilantro or green onions if preferred.
