  • 1 ½2 pounds boneless skinless chicken thighs
  • 1 pound baby Dutch potatoes, quartered
  • 3 cups broccoli florets
  • 1/3 cup olive oil
  • 3 cloves garlic, minced
  • 3 tablespoons freshly squeezed lemon juice
  • 2 teaspoons lemon zest
  • 1 tablespoon Dijon mustard
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon sugar
  • 1 cup Greek yogurt or plant-based yogurt
  • 1/4 cup finely grated Parmesan cheese or nutritional yeast
  • 1/4 cup chopped parsley
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped chives (optional)
  • 1 tablespoon minced dill (optional)
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cumin
  • 1/8 teaspoon pepper

Instructions

  1. Preheat your oven to 400°F.
  2. In a resealable bag, combine marinade ingredients (excluding some reserved for veggies) and add chicken. Seal and ensure the chicken is well-coated; let it marinate at room temperature.
  3. Line a large sheet pan with foil and spray with cooking spray.
  4. Toss quartered potatoes with some reserved marinade and salt on one side of the pan; bake for about 15 minutes.
  5. After baking potatoes, add marinated broccoli and chicken to the sheet pan.
  6. Bake everything uncovered for an additional 17-22 minutes until chicken reaches an internal temperature of 170°F.
  7. While baking, prepare the yogurt sauce by mixing all sauce ingredients in a bowl until combined.
