  • 2.53 kg / 5-6 lb bone-in turkey breast (skin on)
  • 1/2 tsp salt
  • Black pepper
  • 1 brown onion (halved)
  • 1 head of garlic (halved)
  • Fresh rosemary (optional)
  • Fresh thyme (optional)
  • 150 g / 10 tbsp softened unsalted butter
  • 4 large minced garlic cloves
  • 1 tbsp finely chopped fresh sage
  • 1 tbsp finely chopped fresh rosemary
  • 1 tbsp finely chopped fresh thyme
  • 1 tbsp finely chopped fresh parsley

Instructions

  1. Prepare garlic herb butter by mixing butter, minced garlic, and chopped herbs until combined.
  2. Pat the turkey dry and loosen the skin using a knife.
  3. Slather two-thirds of the herb butter under the skin; rub remaining butter on the outside.
  4. Season with salt and black pepper.
  5. Place halved onion and garlic in the slow cooker; add seasoned turkey on top.
  6. Cook on low for 6 hours or until internal temperature reaches 75°C/165°F.
  7. Allow resting for 20 minutes before broiling for crispy skin.
  8. Slice and serve with gravy or your favorite sides.
