  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 1/2 tsp vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 cups chopped pecans (toasted)
  • 1/4 cup unsalted butter for glaze
  • 1/3 cup brown sugar for glaze
  • 2 tbsp milk for glaze
  • 3/4 cup powdered sugar for glaze

Instructions

  1. Preheat your oven to 350°F (175°C) and toast the pecans on a baking sheet for about 5-7 minutes until fragrant.
  2. In a large bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Mix in the egg and vanilla extract until well combined.
  4. In another bowl, whisk together flour, baking soda, and salt; gradually add this to the wet mixture until just combined.
  5. Fold in the cooled toasted pecans gently.
  6. Scoop dollops of dough onto lined baking sheets with space between each cookie.
  7. Bake for approximately 10-12 minutes until edges are golden.
  8. Allow to cool on the baking sheet for about 5 minutes before transferring to a wire rack.
  9. For the glaze, melt butter and brown sugar in a saucepan; stir in milk and whisk in powdered sugar until smooth. Drizzle over cooled cookies.
