  • Pâte Sucrée dough (sweet shortcrust pastry)
  • 2 cups fresh strawberries, chopped
  • 1 tablespoon granulated sugar
  • 1 can (14 oz) sweetened condensed milk
  • 1 cup whole milk
  • 1 cup heavy cream
  • 2 egg yolks
  • 1/4 cup cornstarch
  • 1 teaspoon vanilla extract
  • Additional fresh strawberries for garnish

Instructions

  1. Prepare the tartlet shells by cutting the Pâte Sucrée dough into portions and pressing them into tartlet pans. Freeze for 15-30 minutes.
  2. Bake at 375°F for 10-15 minutes until golden brown.
  3. Make strawberry jam by cooking chopped strawberries with sugar until thickened.
  4. Prepare pastry cream by heating sweetened condensed milk, whole milk, and heavy cream together. Temper the egg yolks with the hot mixture, then cook until thickened.
  5. Chill the pastry cream.
  6. Assemble by spreading strawberry jam in cooled tartlet shells, piping in pastry cream, and garnishing with halved strawberries.
