  • 100g Unsalted Butter (very soft)
  • 40g Powdered Sugar
  • 1 Egg
  • 40g Almond Meal
  • 200g Plain / All-Purpose Flour
  • Pinch of Salt
  • Juice and zest of 3 Large Oranges
  • 4 Eggs
  • 60g Caster Sugar
  • 25g Cornstarch
  • 115g Unsalted Butter (soft)

Instructions

  1. Cream together softened butter and powdered sugar until light and fluffy.
  2. Add in the egg, then fold in almond meal, flour, and salt until combined.
  3. Chill the dough for at least 30 minutes before rolling it out to fit your tart pan.
  4. Blind bake the crust at 180°C (350°F) until golden brown.
  5. In a separate bowl, whisk together orange juice and zest, eggs, sugar, and cornstarch until smooth.
  6. Heat gently while stirring until thickened; then mix in softened butter.
  7. Pour filling into the cooled tart shell and refrigerate until set.
