  • 5 1/2 cups water or beef broth
  • 1 can (12 oz) evaporated milk
  • 1 pound short cut pasta (orecchiette recommended)
  • 5 oz freshly shredded Gruyère cheese
  • Fresh herbs (parsley and thyme)

Instructions

  1. In a large pot, heat olive oil and butter over medium heat. Add sliced onions, salt, and pepper; caramelize for about 25-30 minutes.

  3. Pour in Worcestershire sauce and water (or broth), then add evaporated milk mixed with cornstarch and beef bouillon. Simmer gently.
  4. Add uncooked pasta to the pot; cook until al dente (10-12 minutes).
