  • 2 lbs chicken thighs and legs
  • 1 tbsp olive oil
  • 4 shallots (diced)
  • 1 rib celery (diced)
  • 2 cloves garlic (minced)
  • 2 tbsp apple juice
  • 2 tbsp flour
  • 1/3 cup chicken stock
  • 2 apples (peeled, cored, cut into wedges)
  • 1/2 cup heavy cream

Instructions

  1. Preheat oven to 180C/350F.
  2. Pat chicken dry, season with salt, and brown in olive oil over medium-high heat until golden. Set aside.
  3. In the same pan, sauté shallots and celery until soft. Add minced garlic and deglaze with apple juice.
  4. Stir in flour to form a roux, then gradually add chicken stock and bring to a simmer.
  5. Return chicken to the pan and add thyme sprigs; bring to a boil.
  6. Cover and bake for 30 minutes, then uncover and bake for another 30 minutes.
  7. Stir in heavy cream and fold in cooked apple wedges before serving.
