  • 1 box white cake mix
  • 1 stick (1/2 cup) unsalted butter, melted
  • 4 large eggs (1 for crust + 3 for filling)
  • 8 oz cream cheese, softened
  • 1/4 cup eggnog
  • 2 tsp alcohol-free vanilla extract
  • 1/4 tsp ground nutmeg
  • 16 oz powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C). Line a 13×9" baking pan with foil and spray with cooking spray.
  2. In a large mixing bowl, combine cake mix, melted butter, and 1 egg until dough is formed. Press into the bottom of the prepared pan.
  3. In another bowl, beat cream cheese until smooth. Add remaining eggs one at a time, mixing well after each addition. Then mix in eggnog, both vanilla extracts, nutmeg, and sifted powdered sugar until fully blended.
  4. Pour filling over the crust evenly and bake for 37-45 minutes until golden brown but still slightly jiggly in the center.
  5. Cool for an hour then refrigerate for at least two hours before slicing into squares.
