  • 2 tbsp olive oil
  • 1 pound ground chicken
  • 5 cups cabbage, thinly sliced
  • 1 cup carrots, julienned
  • 1 tbsp ginger, minced
  • 3 cloves garlic, minced
  • 2 tbsp coconut aminos or low sodium soy sauce
  • 2 tsp sesame oil
  • 1 tbsp rice apple vinegar
  • 2 tbsp hoisin sauce
  • 2 tsp chili garlic sauce (or more to taste)

Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add ground chicken and cook until browned (about 3-4 minutes). Drain excess grease and set aside.
  2. In the same pan, add another tablespoon of olive oil. Sauté cabbage and carrots over high heat until golden brown and tender (4-5 minutes). Add ginger and garlic during the last minute.
  3. Return chicken to the pan along with coconut aminos, sesame oil, rice apple vinegar, hoisin sauce, and chili garlic sauce. Toss everything together until well combined.
  4. Serve immediately with optional garnishes like sesame seeds or green onions.
