  • 2 tablespoons granulated sugar or brown sugar
  • 1/8 teaspoon salt
  • 7 tablespoons (100g) unsalted butter, melted
  • 340 g/12 oz. coarsely chopped bittersweet or semisweet chocolate
  • 1 cup (240 ml) heavy cream
  • 1/4 cup (1/2 stick/55g) unsalted butter, cut into pieces
  • 2 large egg whites, at room temperature
  • 2/3 cup (130g) granulated sugar
  • 1/8 teaspoon salt
  • 1/4 teaspoon pure vanilla extract

Instructions

  1. Preheat your oven to 350°F (180°C). In a mixing bowl, combine the finely ground graham crackers, sugar, and salt. Pour in the melted butter and mix until everything is well combined and resembles wet sand. Press this mixture firmly into a 9-inch tart pan to create a sturdy crust. Bake for about 10 minutes.
  2. In a saucepan over medium heat, bring the heavy cream just to a simmer. Remove from heat and stir in the chopped bittersweet or semisweet chocolate along with pieces of butter until smooth and silky.
  3. Once your crust has cooled slightly, pour in the chocolate filling. Give it a gentle shake to level out the surface. Let it cool at room temperature while making the marshmallows topping.
  4. In a clean mixing bowl, whisk together egg whites until frothy. Gradually add granulated sugar and salt while continuing to whisk until stiff peaks form. Gently fold in vanilla extract.
  5. Spread the marshmallows topping over your cooled pie and use a kitchen torch to toast them until golden brown. If you don’t have a torch, place it under the broiler briefly, watching closely to avoid burning.
  6. Let the pie chill in the refrigerator for at least four hours before slicing.
