  • 8 medium waxy potatoes, peeled and diced
  • 2 shallots, halved
  • 5 heads garlic
  • Olive oil
  • Salt and pepper
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 3 cups chicken or vegetable broth
  • 1 cup heavy cream (or plant-based alternative)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. On a baking sheet, combine diced potatoes, halved shallots, and garlic heads. Drizzle with olive oil and season with salt, pepper, thyme, and rosemary.
