  5. Fold in chocolate chips; perform three sets of stretch and folds spaced thirty minutes apart.
  6. Cover and let ferment overnight at room temperature until doubled in size (7-12 hours).
  7. Shape your loaf by folding sides into the center; create surface tension.
  8. Place in a lightly floured bowl for final proofing (1-3 hours).
  9. Preheat oven to 425°F (220°C); bake covered for 25 minutes, then uncovered for another 20-25 minutes.
  10. Cool on a wire rack for at least one hour before slicing.
