  • 1 lb boneless, skinless chicken breasts

  • 4 cups diced onions and bell peppers
  • 1 (10 oz) can diced tomatoes with green chiles
  • 1 cup shredded cheddar cheese

  6. Return the chicken to the pot along with any collected juices, then gently fold in the cooked rice. Mix thoroughly.
