  • 10 ounces dried penne pasta
  • 1/4 cup extra virgin olive oil
  • 1/2 medium red onion, sliced
  • 1 large carrot, sliced into thin strips
  • 2 cups broccoli florets
  • 1 medium red bell pepper, sliced
  • 1 medium yellow squash, quartered and sliced
  • 1 medium zucchini, quartered and sliced
  • 34 garlic cloves, minced
  • 1 heaping cup grape tomatoes, halved
  • 2 tablespoons fresh lemon juice
  • 1/2 cup grated parmesan cheese (divided)
  • Fresh parsley for garnish

Instructions

  1. 1. Cook the pasta: Boil salted water in a large pot. Add penne and cook until al dente. Reserve some pasta water before draining.
  2. 2. Sauté the vegetables: In a skillet over medium heat, heat olive oil. Sauté onion until translucent, then add carrots, broccoli, bell pepper, yellow squash, zucchini, and garlic. Cook until tender (5-7 minutes).
  3. 3. Combine: Add drained pasta to the skillet with sautéed veggies. Stir in grape tomatoes and Italian herbs, along with reserved pasta water and lemon juice.
  4. 4. Finish: Mix in half of the parmesan cheese until melted. Garnish with parsley before serving.
