  • 1 pound potatoes (diced)
  • 3 carrots (peeled and sliced)
  • 1 medium yellow onion (diced)
  • 1 cup beef stock
  • 1 tablespoon minced garlic
  • 2 tablespoons cornstarch
  • 8 oz sliced mushrooms
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions

  1. Season the chuck roast generously with salt and pepper, placing it in the center of the crockpot with diced potatoes, sliced carrots, and diced onion.
  2. In a bowl, whisk together beef stock, minced garlic, garlic powder, onion powder, oregano, thyme, salt, and pepper. Pour this mixture over the roast and veggies.
  3. Cover and cook on low for 7 to 8 hours or high for 6 to 7 hours.
  4. About 15 minutes before serving, mix cornstarch with water to create a slurry and stir it into the crockpot to thicken the gravy.
  5. Add sliced mushrooms and cook for an additional 10 to 15 minutes until gravy thickens.
