  • 1.5 pounds boneless, skinless chicken breasts or thighs
  • 1 packet taco seasoning
  • 1 can Rotel (strained)
  • Juice of 1 lime
  • Flour or corn tortillas
  • Pico de gallo
  • Guacamole or sliced avocado
  • Sour cream
  • Lime wedges
  • Cilantro
  • Cheese

Instructions

  1. Prepare the crockpot by spraying it with non-stick spray.
  2. Place the chicken in the bottom of the crockpot and sprinkle taco seasoning over it.
  3. Pour in the strained Rotel and squeeze the lime juice on top.
  4. Cover and cook on high for 3 to 4 hours or low for 7 to 8 hours until tender.
  5. Shred the chicken using two forks directly in the crockpot.
  6. Serve in warmed tortillas with desired toppings.
