  • 2 pounds boneless stewing beef cubes
  • 1/2 medium onion
  • 6 cloves garlic
  • 1 pound Yukon Gold potatoes
  • 4 large carrots
  • 3 sticks celery
  • 3 cups beef broth
  • 1 (6 ounce) can tomato paste
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper to taste
  • 3 bay leaves

Instructions

  1. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Sear half the beef cubes until browned on all sides; transfer to a plate and repeat with remaining beef.
  2. In the same skillet, sauté onions until translucent (about 3-4 minutes), then add minced garlic for another 30 seconds before transferring to the slow cooker.
  3. Combine all ingredients in your slow cooker: beef, onions, garlic, potatoes, carrots, celery, beef broth, tomato paste, Worcestershire sauce, salt, pepper, and bay leaves. Stir well.
  4. Cover and cook on low for about 10 hours or until the beef is tender.
  5. For a thicker stew, mix cornstarch with cold water and stir into stew during the last 10 minutes of cooking.
