  • 3 lbs Bone-In Beef Short Ribs
  • 3 Cups Baby Carrots
  • 2 Cups Sliced Mushrooms
  • 2 Cups Beef Broth
  • 1 Cup Apple Vinegar (optional)
  • 2 Tbsp Tomato Paste
  • 3 Tbsp Unsalted Butter
  • 1 Bay Leaf
  • 8 Sprigs Fresh Thyme
  • 1 Tbsp Garlic (Minced)
  • Salt (To Taste)
  • Pepper (To Taste)

Instructions

  1. Season the beef short ribs with salt and pepper. Heat a large skillet over medium heat and sear each rib until browned on all sides, about 20 seconds per side.
  2. In your crockpot, combine the seared ribs with baby carrots, mushrooms, beef broth, apple vinegar (if using), tomato paste, butter, bay leaf, thyme sprigs, and minced garlic.
  3. Cook on low for about 8 hours until the meat is tender and falling off the bone.
  4. Once done, remove short ribs and vegetables from the crockpot. Drizzle the cooking liquid over them before serving.
