  • 23 boneless, skinless chicken breasts (or thighs)
  • 4 cups low-sodium chicken broth
  • 1 small yellow onion, finely chopped
  • 34 garlic cloves, minced
  • 1 tsp Italian seasoning
  • 1 (14.5 oz) can crushed tomatoes
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Fresh parsley for garnish

Instructions

  1. Place chicken at the bottom of the crock pot.
  2. Add onion, garlic, Italian seasoning, crushed red pepper flakes (if using), and crushed tomatoes on top.
  3. Pour in chicken broth until everything is covered.
  4. Cook on low for 6-7 hours or high for 3-4 hours.
  5. Shred cooked chicken and return it to the pot.
  6. Stir in heavy cream until combined.
  7. If desired, thicken with cornstarch slurry during the last 20–30 minutes of cooking.
  8. Gradually add Parmesan cheese while stirring until melted.
  9. Season with salt and pepper to taste; garnish with parsley before serving.
