  • 3 cups rotisserie chicken (shredded)
  • 2 (15 oz) jars alfredo sauce
  • 1½ cups mozzarella cheese (shredded)
  • 1 (12 oz) box oven-ready lasagna noodles
  • 2½ cups baby spinach (coarsely chopped)
  • 1½ cups parmesan cheese (shredded)
  • 1 (32 oz) container ricotta cheese
  • 3 tsp garlic (minced)
  • 1 tsp salt
  • 1 tsp ground black pepper
  • 1½ tsp Italian seasoning
  • 2 eggs

Instructions

  1. Spray the inside of a 6-quart slow cooker with nonstick cooking spray.
  2. In a large bowl, mix mozzarella, parmesan, ricotta, garlic, eggs, salt, black pepper, and Italian seasoning until well combined.
  3. Spread ¾ cup of alfredo sauce in the bottom of the slow cooker. Layer five lasagna noodles on top.
  4. Pour half of the remaining alfredo sauce over the noodles and spread half of the cheese mixture on top. Add half of the shredded chicken and 1 cup of chopped spinach.
  5. Repeat layering with another five noodles, remaining sauce, cheese mixture, chicken, and spinach.
  6. Finish with any leftover noodles on top, cover with reserved alfredo sauce and sprinkle with remaining spinach.
  7. Cover and cook on low for about four hours until bubbly. Add mozzarella cheese on top for the last 10-15 minutes to melt.
