Ingredients
Scale
1½ pounds Brussels sprouts, trimmed and halved
2 tablespoons olive oil
Salt and freshly ground black pepper, to taste
2 tablespoons balsamic vinegar
1½ tablespoons honey
1 teaspoon Dijon mustard (optional)
1 small garlic clove, finely minced (optional)
Red pepper flakes (optional)
Instructions
Preheat oven to 425°F (220°C).
Trim any damaged leaves from the Brussels sprouts and slice them in half.
Pat the halved sprouts dry with paper towels and toss in a mixing bowl with olive oil, salt, and pepper until evenly coated.
Spread the sprouts cut-side down on a parchment-lined baking sheet and roast for 20–25 minutes, flipping halfway through.
Meanwhile, prepare the glaze by simmering balsamic vinegar and honey in a small saucepan for 2–3 minutes until slightly thickened. Add Dijon mustard and minced garlic if desired.
Once roasted, immediately toss the Brussels sprouts in the warm glaze to coat before serving.
