Ingredients

Scale
  • 3 to 4 pounds corned beef (with spice packet)
  • 2 tablespoons Dijon mustard
  • 3 cloves garlic (minced)
  • 3 tablespoons brown sugar
  • 1 cup apple juice (or apple cider)
  • 2 tablespoons apple cider vinegar
  • Coarse black pepper
  • Fennel seeds

Instructions

  1. Preheat your oven to 300°F (150°C) or set your slow cooker on low.
  2. Rinse the corned beef under cold water and pat dry.
  3. In a bowl, mix Dijon mustard, minced garlic, brown sugar, coarse black pepper, and fennel seeds to create a marinade.
  4. Coat the corned beef with the marinade evenly.
  5. For the oven method: Place the beef on a baking sheet lined with foil. Pour apple juice and apple cider vinegar around it. Cover loosely with foil and bake for about 2 hours until fork-tender, removing foil halfway through.
