  • 1/4 cup sour cream
  • 1 tbsp lemon or lime juice
  • 8 oz lean ground turkey
  • 3/4 cup canned black beans
  • 6 fajita-sized flour tortillas
  • 1 1/2 cups shredded Monterey Jack cheese
  • 2 tsp avocado oil
  • 2 1/2 tsp homemade taco seasoning
  • 1/3 cup chopped onion
  • 4 oz green chiles
  • 2 tbsp finely chopped cilantro
  • 1/2 tsp cumin
  • 1/2 tsp Mexican oregano
  • 1/2 tsp garlic powder
  • 1/2 tsp kosher salt
  • 1/4 tsp smoked paprika
  • 1/4 tsp chili powder
  • 1/8 tsp cayenne pepper (optional)

Instructions

  1. Prepare the avocado sauce by blending avocado, sour cream, lemon juice, cilantro, salt, and water until smooth.
  2. In a pan, heat avocado oil and cook ground turkey with onions until browned. Add taco seasoning and black beans; stir well.
  3. Preheat oven to 425°F (220°C). Spray a baking sheet with cooking spray.
  4. Assemble tacos by placing cheese on tortillas, adding turkey mixture on one half, and folding over.
  5. Bake for about 10-12 minutes until golden brown and crispy.
