  • 2 lbs organic chicken breasts
  • 16 oz package potato gnocchi
  • 5 cups organic chicken stock/broth
  • 1 cup heavy cream
  • 4 garlic cloves, minced
  • 1 lemon (sliced and juiced)
  • 2 cups kale (chopped)
  • 2 Tbsps Extra virgin olive oil
  • 2 Tbsps unsalted butter
  • 4 fresh thyme sprigs
  • Sea salt + black pepper, to taste
  • 4 Tbsps organic all-purpose flour
  • 1 tsp lemon zest

Instructions

  1. Heat olive oil in a large pot over medium heat. Season chicken with salt and pepper and sauté until golden brown (about 7-8 minutes per side). Remove from pot and shred once cooled.
  2. In the same pot, melt butter and sauté garlic and thyme until fragrant.
  3. Sprinkle flour into the pot while continuously stirring. Gradually whisk in chicken stock and bring to a simmer.
  4. Add gnocchi and shredded chicken; cook until gnocchi float to the top.
  5. Lower heat and stir in heavy cream, lemon juice, kale, and lemon zest until well combined.
