Ingredients

  • Gnocchi (500g)
  • Olive oil (2 tablespoons)
  • Onion (1 medium, chopped)
  • Garlic (3 cloves, minced)
  • Crushed tomatoes (1 can, 28oz)
  • Tomato paste (2 tablespoons)
  • Heavy cream (1 cup)
  • Fresh spinach (5 oz, baby spinach)
  • Parmesan cheese (½ cup, grated)
  • Dried oregano (1 teaspoon)
  • Dried basil (1 teaspoon)
  • Salt & black pepper (to taste)

Instructions

  1. Bring a pot of salted water to boil. Cook the gnocchi according to package instructions until they float; drain and set aside.
  2. In a skillet over medium heat, warm olive oil. Sauté chopped onion for 5–7 minutes until translucent.
  3. Add minced garlic and tomato paste; sauté for an additional minute until fragrant.
  4. Stir in crushed tomatoes, oregano, basil, salt, and pepper. Simmer uncovered for 15–30 minutes.
  5. Reduce heat; stir in heavy cream and Parmesan until well combined.
  6. Mix in spinach until wilted. Combine cooked gnocchi with the sauce.
  7. Serve hot with extra Parmesan on top.
