  • 1 lb chicken or turkey sausage (mild or spicy)
  • 2 cups fresh spinach
  • 1 cup carrots, diced
  • 2 cloves garlic, minced
  • 1 cup heavy cream (or coconut cream for dairy-free)
  • 4 cups chicken or vegetable broth
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, cook the sausage until browned, breaking it into pieces as it cooks. Drain excess fat and set aside.
  2. In the same pot, sauté garlic and diced carrots for about 3 minutes until softened.
  3. Pour in the broth and bring to a simmer.
  4. Add the gnocchi; cook for 2-3 minutes until they float to the top.
  5. Stir in spinach and heavy cream until the spinach wilts down.
  6. Return cooked sausage to the pot; season with thyme, salt, and pepper. Simmer for an additional 5 minutes.
