  • 2 lbs salmon, cut into individual portions
  • 2 Tbsp avocado oil
  • 1 cup yellow onion, chopped
  • 5 large cloves garlic, minced
  • 1 (16-oz) jar roasted red peppers, drained
  • 1 (15-oz) can full-fat coconut milk
  • Sea salt to taste
  • Optional: cherry tomatoes
  • Optional: baby spinach

Instructions

  1. Heat 1 tablespoon of avocado oil in a skillet over medium heat. Sauté onions until translucent. Add minced garlic and sauté until fragrant.
  2. Add roasted red peppers, coconut milk, and sea salt to the skillet; let simmer.
  3. Season salmon with garlic powder, paprika, and sea salt. Heat the remaining avocado oil in another pan over medium-high heat.
  4. Cook salmon skin-side down until golden brown (4-5 minutes). Flip carefully to achieve a perfect sear.
  5. Pour the roasted red pepper sauce over the cooked salmon; add cherry tomatoes and spinach if desired. Cover and simmer for an additional 5 minutes.
