  • 8 oz chickpea rotini pasta
  • 1/2 red bell pepper, diced
  • 1/2 English cucumber, diced
  • 1.5 cups broccoli florets, finely chopped
  • 1 cup cherry tomatoes, diced
  • 1/4 cup red onion, diced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh basil, chopped
  • 1.5 oz crumbled fat-free feta cheese (optional)
  • 2.25 oz can of sliced black olives
  • Salt and pepper to your preference
  • 1/4 cup extra virgin olive oil
  • 4 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 garlic clove, finely minced

Instructions

  1. Cook the chickpea rotini according to package instructions until al dente. Drain and rinse under cold water.
  2. While pasta cooks, chop all veggies: red bell pepper, cucumber, broccoli florets, cherry tomatoes, red onion, parsley, and basil.
  3. In a bowl, whisk together olive oil, apple cider vinegar, Dijon mustard, minced garlic, salt, and pepper.
  4. In a large bowl, combine cooked pasta and veggies. Pour the dressing over and toss gently to coat evenly.
  5. Chill in the refrigerator for at least 15 minutes before serving.
