  • 150g dried cranberries (roughly diced)
  • 125g pecans (roughly diced)
  • 100g mature cheddar cheese (grated)
  • 1/4 cup finely diced chives

Instructions

  1. In a small mixing bowl, combine roughly diced pecans, cranberries, and finely diced chives to create the coating mixture.
  2. In a large bowl, mix full-fat cream cheese and grated cheddar until smooth. Fold in half of the pecan mixture.
  3. Transfer the mixture onto cling film and shape it into a log; wrap tightly and refrigerate for at least one hour.
  4. Before serving, roll the chilled log in the remaining pecan mixture for an even coat.
  5. Serve with assorted crackers or fresh veggie sticks.
