  • 4 medium sweet potatoes
  • 1 cup fresh cranberries (or frozen)
  • 2 medium apples (like Granny Smith or Honeycrisp)
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 2 tablespoons unsalted butter
  • A pinch of salt

Instructions

  1. Preheat oven to 400°F (200°C). Wash sweet potatoes, poke holes in them, and place on a parchment-lined baking sheet. Bake until tender, about 45-60 minutes.
  2. Once cool, slice sweet potatoes in half lengthwise and scoop out most of the flesh into a bowl. Add chopped apples, cranberries, brown sugar, cinnamon, butter, and salt; mix well.
  3. Spoon the filling back into the potato skins, mounding it high. Return to the oven and bake at 350°F (175°C) for another 15-20 minutes until golden.
