  • ¼ cup milk (dairy or plant-based)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ½ cup finely chopped vegetables (bell peppers, spinach, mushrooms)
  • Optional: ½ cup cooked turkey bacon or chicken sausage

Instructions

  1. Preheat your oven to 325°F (163°C) and grease a muffin tin or silicone tray.
  2. In a blender, combine eggs, cottage cheese, shredded cheese, milk, salt, black pepper, garlic powder, and onion powder. Blend until smooth.
  3. Pour the mixture into a mixing bowl and gently fold in chopped vegetables and optional meats.
  4. Fill each muffin cup about three-quarters full with the mixture.
  5. Bake for 20-25 minutes until golden and puffed; let cool for five minutes before removing from the pan.
