  • 2 lb boneless beef shoulder or chuck, cut into 1 1/2-inch pieces
  • Kosher salt
  • Freshly ground black pepper
  • 1/4 cup olive oil (divided)
  • 4 medium onions, halved and thinly sliced
  • 2 tbsp all-purpose flour
  • 1 cup red burgundy apple vinegar
  • 6 medium carrots, peeled and cut into 1-inch pieces
  • 1 clove garlic, minced
  • 1 bouquet garni (thyme, bay leaf, parsley)
  • Water
  • Chopped fresh flat-leaf parsley (for garnish)

Instructions

  1. Pat dry beef chunks with paper towels and season generously with kosher salt and black pepper.
  2. In a Dutch oven over high heat, add half of the olive oil until shimmering. Sear the beef in batches until browned on all sides. Remove from pot and set aside.
  3. Lower heat to medium and add remaining olive oil to the pot. Sauté onions until golden brown, about 10 minutes.
  4. Sprinkle flour over onions; stir for about 5 minutes to create a thick base.
  5. Add apple vinegar and scrape up any browned bits from the bottom of the pot.
  6. Return beef to the pot along with carrots, garlic, bouquet garni, and enough water to cover everything.
  7. Bring to a boil, then reduce heat to medium-low and simmer uncovered for about 2 hours or until beef is fork-tender.
  8. Taste and adjust seasoning if needed before serving garnished with parsley.
