  • 300 grams pasta (your choice)
  • 300 grams broccoli (cut into small florets)
  • 200 grams halloumi cheese (cubed)
  • 1 fennel bulb (thinly sliced)
  • 2 tablespoons olives (sliced into rings)
  • 2 tablespoons roasted red peppers (cut into strips)
  • 2 spring onions (sliced into rings)
  • 3 tablespoons pesto
  • 1 tablespoon olive oil (for frying)
  • 2 tablespoons toasted pine nuts
  • Fresh basil for garnish

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and rinse under cold water.
  2. In a large skillet, heat olive oil over medium heat. Sauté broccoli florets for about 5 minutes until bright green. Add cubed halloumi and fry until golden brown.
  3. In a large bowl, combine cooked pasta, sautéed broccoli and halloumi, fennel, olives, roasted red peppers, toasted pine nuts, and spring onions. Toss gently with pesto dressing.
  4. Garnish with fresh basil before serving. Enjoy warm or let chill in the fridge for about 30 minutes.
