Ingredients

Scale
  • 1 egg
  • 1 cup sweetened coconut flakes
  • 1/2 cup all-purpose flour (or gluten-free alternative)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 boneless chicken breasts
  • 1/2 cup unsalted butter (melted)
  • 1/4 cup apricot preserves
  • 2 tablespoons Dijon mustard

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, beat the egg until frothy. In a shallow bowl, mix coconut flakes, flour, garlic powder, salt, and black pepper.
  3. Dip each chicken breast into the egg wash, ensuring it's well coated, then press into the coconut mixture until fully covered.
  4. Place the coated chicken on the prepared baking sheet and drizzle melted butter over them.
  5. Bake for 30–40 minutes until golden brown and reach an internal temperature of 165°F (75°C). Flip halfway through for even cooking.
  6. Meanwhile, combine apricot preserves and Dijon mustard in a small bowl; mix until smooth.
  7. Serve warm, drizzled with apricot sauce or on the side for dipping.
