  • 1 head of romaine lettuce, chopped (45 cups)
  • 1 cup sliced cherry tomatoes
  • 1/2 cup chopped cucumber
  • 1/2 cup shredded carrots (or matchstick carrots)
  • 1/3 cup diced or sliced red onion
  • 1 cup gluten-free croutons
  • 1/4 cup apple vinegar
  • 1/2 cup extra virgin olive oil
  • 1 tablespoon Dijon mustard
  • 1 tablespoon maple syrup
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a mason jar, combine apple vinegar, olive oil, Dijon mustard, maple syrup, oregano, garlic powder, salt, and pepper. Shake well to emulsify.
