  • 3 pounds beef chuck (cut into 1.5-inch chunks)
  • ¼ cup flour
  • 1 tablespoon paprika
  • 4 tablespoons olive oil (divided)
  • 1 large white onion (chopped)
  • 1 green bell pepper (chopped)
  • 5 garlic cloves (chopped)
  • 1 pound yellow potatoes (cut into bite-sized pieces)
  • 3 large carrots (cut into bite-sized pieces)
  • 2 cups apple vinegar
  • 2 cups beef stock
  • 1 tablespoon Worcestershire sauce
  • Italian seasoning and bay leaves

Instructions

  1. In a large bowl, mix flour, paprika, salt, and pepper. Coat each chunk of beef with the mixture.
  2. Heat 1 tablespoon olive oil in a Dutch oven and sear the beef in batches until browned on all sides. Set aside.
  3. Add remaining olive oil to the pot and sauté onions, green pepper, and celery for about 5 minutes.
  4. Stir in garlic and tomato paste; cook for an additional minute.
  5. Pour in apple vinegar and beef stock, deglazing the pot by scraping up any brown bits.
  6. Return beef to the pot along with Italian seasoning and bay leaves.
  7. Bring to a boil then reduce heat to simmer for 2 hours.
  8. Add potatoes and carrots; continue cooking uncovered for another hour until vegetables are tender.
